Royal Icing Recipe

For many cookie decorators royal icing is their icing of choice. While it is thinner than frosting, it dries to a very hard finish making the cookies very easy to handle.

Traditionally royal icing is made with egg whites, but becuase of concerns about salmonella, these days meringue powder is frequently used to make the cookie icing. Bend Cookie Company uses meringue powder in place of fresh egg whites for this reason, and the ease of availability makes them a good choice.


  • 4 Cups (1 pound) Powdered Sugar
  • 5 Tbs Meringue Powder
  • 2 Tbs Water
  • ½ Tsp. Pure Vanilla Extract (use clear vanilla if you want a pure white icing)


Combine ingredients in mixing bowl and beat to stiff peaks (approx. 10 minutes).

Note: Thicken icing with additional powdered sugar or thin with additional water.
